blueberry chocolate CBD muffins

I made weed muffins. Not with the kind of marijuana that gets you high, but the kind of CBD from marijuana (not hemp based) that helps with pain, anxiety, sleep etc. They are celiac friendly, low carb friendly and pretty tasty! Because I’m one of those people who can’t stand recipe posts that you have to scroll through endless paragraphs and pictures of shit nobody cares about, Imma just give you the recipes now!

There are two things you need to make:

  1. CBD Butter
  2. Muffins

For the CBD Butter:

  • 3.5 grams dried & crushed bud (I used CBD but you could easily use your regular weed if that’s your thang)
  • 1/2 cup of butter (you could also use coconut oil)

Bake the dried bud at 240 for 35 minutes. Place a glass jar that seals shut (I used one with the hinge & clasp) into a medium sized pot filled with water on the stove top. Add the butter & bud to melt in the sealed jar & allow it to boil for about 2 hours. Strain the herb from the finished CBD butter by pouring it into another jar covered with a nylon (a clean one obviously!). When ingesting CBD, it is important that it is consumed in a fat so that it can be properly absorbed and its medicinal benefits are more enhanced. It also has to be heated in order to experience any benefits (which is why it had to be baked & boiled for this recipe, and also why people smoke or vape it).

For the Muffins (Makes 2 dozen)

  • 1 cup coconut flour
  • 1 cup cacao powder
  • 3/4 cup monkfruit sweetener (you can also use Swerve).
  • 1.5 cups fresh blueberries
  • 4 cups grated zuchinni
  • 1/2 cup CBD butter
  • 2 TSP gluten free baking powder
  • 1/4 tsp salt
  • 2 tbsp vanilla
  • 1 tsp cinnamon
  • 8 free range eggs (beaten)

Combine dry ingredients in a large mixing bowl.

Add eggs, vanilla & CBD butter & mix well until no lumps or clumps remain.

Scoop into muffin tins lined with cupcake papers.

Bake at 350 for 25 to 30 minutes (poke centre with a toothpick; it’s ready when it comes out clean)

Cool & eat!

When cooking with coconut flour, you need more eggs than other flours. To avoid the overly egg-y flavour that sometimes happens with this, leave them out on the counter & use them once they have reached room temperature. I don’t know why this works but I read it somewhere a while ago, tried it and lo and behold, it’s true.

Be mindful of how much you consume:

When using sugar replacements like monkfruit or Swerve, you need to be mindful of how much you eat. If you consume too much at once you will get the shits. Legit. You have been warned!

If you’re using regular sugar instead of one of the alternatives mentioned above, you still want to pay attention to how much you’re eating. When you consume too much CBD at once, you can feel weird. Not high, but weird so that’s another reason not to eat them all at once (unless you like feeling like that…whatever floats your goat!).

If you’ve used regular THC sporting weed, you’ll be high AF if you eat too many so really – the message here is just don’t go to town.

I don’t count carbs or calories so if you’re interested in nutritional information you can figure it out on one of the many apps out there that can do it for you 🙂

Namastizzle, mo fos!
